Have you ever wondered why bread becomes stale? It's not just because of moisture loss, but also due to the way starch molecules align within the bread. As bread sits, water molecules move from between the starch molecules to the surface of the loaf, causing the starch molecules to come into contact with each other and form a crystalline structure. This makes the bread harder and tougher.
To prevent bread from going stale, it's best to store it in a moderately moist environment. However, avoid putting it in the fridge as the staling process accelerates at low temperatures.
So What can a bread box do for storing bread?
Bread boxes are useful in maintaining the original features of bread, such as a crispy outside, a moist inside, and a delicious texture. They work similarly to plastic bags by trapping the bread's moisture inside, but bread boxes have a breathable design that allows some of the moisture to escape, preventing the bread's exterior from softening. Overall, bread boxes provide the ideal humid environment to keep your bread fresh and delicious for up to three or four days.
Though the sliced loaf dried out on the cut end when stored in the bread box. It would be able to prevent drying if you pressed the slices together to protect the exposed slice, but the slices in the plastic could be fully exposed without drying out (at the expense of a crisp exterior, of course).
How to Keep Bread Fresh?
If you’re buying pre-sliced bread, the bread box might not be for you. But if you want to keep a store-bought artisan loaf (or, better yet, homemade bread) in its peak condition for a few days, it is definitely recommended a bread box.
